Alright guys. Are you ready for an easy and super satisfying chicken recipe? I really don’t need to talk this one up because it really sells itself; truly love at first bite. Garlic, turmeric, chicken thighs….what’s not to love!? I came across this recipe last year and it called for chicken thighs. I haven’t cooked chicken thighs in years because I’ve just always preferred white meat. But, I have to say, I did (and will continue to) make this with chicken thighs. It’s delicious!! My boys love dark meat chicken and this dish is now a recurring meal in our house.
The original recipe called for chili powder but I wasn’t feeling it the first time I made this. I’ve been on a big turmeric kick so I subbed the chili for turmeric and I’ve never looked back! Turmeric is a great spice. There are copious amounts of health benefits that come from this bright yellow spice. I’ve used it in the past to aid in inflammation and skin problems but this superfood is great in so many way. Check out for yourself here!
I’m just going to cut to the chase and let you get right to the recipe so you can get started on ‘wowing’ your family tonight!!
Golden Garlic Chicken Thighs
Serving Size: 4-5
Prep Time: 5 mins
Marinade: 1-3 hours
Cook Time: Approx 45 mins
* 1 package of boneless, skinless chicken thighs (approx. 10-12 chicken thighs)
* 1/2 cup of mayonnaise
* 4 cloves of minced garlic (from clove or minced garlic in the jar)
* 2 tsp of Turmeric
* 1 tsp of Paprika (optional – sometimes I do and sometimes I don’t!)
* salt and pepper to taste
Preheat oven to 400°.
In a small bowl, mix together all of the ingredients, except the chicken. In a large Ziploc bag or bowl, add the chicken thighs and spoon the ”sauce” over top the chicken.
Mix the sauce into the chicken and let sit in the fridge for a couple of hours or whatever you have time for. I made this chicken again last week and didn’t have time for it to sit for more than 10 mins and it still came out great.
When it’s time to cook, put all of the chicken and sauce into a baking dish and cook for approx. 40 mins. The internal temp of the middle part of the chicken should be 165° F.
For the last few mins of cooking, broil on high for 3-5 mins or until the tops are browned up. Don’t walk away from your oven at this time!! Continue to keep checking every 30 seconds or so or else the chicken may burn.
Serve with a side of rice, potatoes, quinoa, bread….anything that will help to soak up the yummy creamy sauce!
